DSM introduces new Delvo Cheese CH-120 culture range for young cheddar and barrel cheese

Royal DSM, a global science-based company in nutrition, health and sustainable living, has launched its new Delvo Cheese CH-120 cultures, a range of phage robust cultures for young cheddar and barrel cheese.

Debuting at the International Cheese Awards 2019 in Nantwich, UK, DSM said the new series allows cheesemakers to increase production efficiency, while also delivering cheese of consistent quality, taste and texture, even during the long production runs demanded by today’s large, cost-driven cheese diaries.

Young cheddar and barrel cheese accounts for the majority of cheddar cheese types produced worldwide today. These cheeses are widely used in the food processing and services industries for food products including ready meals, pizza and burgers.

Tested by selected commercial cheesemakers, the Delvo​Cheese CH-120 range consists of six rotations and selected culture strains to resist phages. This new range offers durable phage protection and a consistent performance, DSM said. It also creates young cheddar and barrel cheese with the neutral flavor and firm, texture of cheddar cheese the market expects.

Visitors to the International Cheese Awards 2019 at The Nantwich Show, will also be able to find out more about DSM’s expanding portfolio of cultures, enzymes and coagulants that improve the production capacity and efficiency, as well as the flavor and texture of cheese. This includes DSM’s Maxiren XDS coagulants and the recently launched, Delvo ADD adjuncts culture portfolio.

Unicorn sprinkles from Pecan Deluxe

UK food company Pecan Deluxe has developed shiny colored sprinkles it says are ideal for unicorn and galaxy themes.

A new range of pastel-colored shimmer balls is already in demand from ice cream manufacturers and bakery retailers looking for innovation to develop all-age-friendly, multi-colored, themed product lines.

Pecan Deluxe’s latest launch complements its existing offerings of meringue pieces, sugar pearls and sprinkles, and popping candies, providing a selection of tailor-made offerings for unicorn, rainbow, galaxy, narwhal and mermaid themes, to name just a few.

Pecan Deluxe has ongoing development relationships with ice cream and bakery producers using the new range and connected products, for applications such as hand-held ice-cream, doughnuts and muffin tray bakes.

All Pecan Deluxe products, including traditionally made fudge, moulded chocolate shapes, brownie pieces, cookie dough and praline nuts, are made using natural colors and flavorings in strict allergen controlled, BRC A grade facilities.

The company was established in the UK in 1999 and is a fully owned UK subsidiary of US based Pecan Deluxe Candy Company, a family owned business founded in 1950.

Kerry Group at Vitafoods

DairyReporter met with Kerry Group at Vitafoods recently to discover what concepts were being promoted by the Irish-headquartered food and food ingredients group.

At the event, the company was showcasing new concepts for existing ingredients, including for Wellmune, a leading natural yeast beta glucan clinically proven to help strengthen the immune system.

Beta glucans are naturally found in foods such as baker’s yeast, shiitake mushrooms, and cereal grains, like barley, oats, rye, and wheat. Wellmune is a yeast beta 1,3/1,6 glucan. Wellmune is extracted from the cell wall of a proprietary strain of baker’s yeast and is naturally gluten-free.

It can be added to a variety of everyday foods, beverages and supplements, and can be found in hundreds of products in more than 60 countries.

The company was also featuring existing products containing GanedenBC30, a market-leading probiotic, as well as new concepts for the probiotic.

GanedenBC30 (Bacillus coagulans​ GBI-30, 6086) is a patented probiotic ingredient that can be found in more than 900 leading food, beverage, sports nutrition and companion animal products around the world.

Unlike most other probiotic strains, GanedenBC30 is spore-forming, which makes it highly stable and allows it to remain viable through most manufacturing processes, three years of shelf life and the low pH of stomach acid.
