Danisco Flavours has launched a range of mango profiles suitable for yoghurt and ice cream products. The company believes that the range is particularly innovative as capturing a realistic mango taste has been notoriously difficult to achieve.

Danisco believes that the potential market for authentic mango flavouring is huge. Mangoes are the world's most consumed fruit, eaten by over half the global population.

This is despite the fact that, when compared to more familiar fruits such as apples, oranges and bananas, which require little or no preparation, mangoes demand a great deal more dexterity to actually eat. After peeling, the fibrous flesh must be removed from the large central seed.

The firm is therefore confident that many consumers will prefer to taste mangoes through the consumption of a yoghurt or ice cream product that contains an accurate mango flavour.

Danisco​ reports that achieving the final range of mango flavours has taken time. The firm selected a number of cultivars out of over 1,000 possible plants and reproduced those which contain the principal flavour signatures.

The new flavour collection includes mango profiles from India, Africa, Australia and Brazil, each of which give the distinction associated with a particular cultivar.
