This technical paper benchmarks three important calcium salts used for fortification of dairy and infant formula plus the usage of the pH regulator tripotassium citrate with regard to their effect on unwanted fouling deposits during heat treatment.

Best results were achieved with Jungbunzlauer: highly bioavailable organic tricalcium citrate M2090 as such or particularly in combination with Jungbunzlauer tripotassium citrate as buffering agent.
