DairiConcepts expands concentrated dairy flavor system range

Dairy-based ingredients supplier DairiConcepts has expanded its range of cheese flavors and blends to include new flavors, as well as many with organic, halal and kosher certification, the company has said.

The company’s Supernatural Concentrates ingredients are made with real dairy products and deliver cheese and other dairy flavors in concentrations of three to 20 times their natural flavor. DairiConcepts claims that this allows food manufacturers to cut costs, as they can use smaller quantities of concentrated ingredients and achieve the same flavor intensity.

The company has extended the ingredient range, which comes in a paste form, from its original American, cheddar and blue cheese flavors, to include Italian, Mexican and Swiss cheeses, cream cheese, butter, sour cream and yogurt.

President of DairiConcepts Jeff Miyake said: “The convenience and cost-saving attributes of Supernatural Concentrates combined with their versatile flavor possibilities provide opportunities for food manufacturers to develop new, on-trend food items and hold or reduce the cost of existing products.”

Providing lower cost dairy ingredients is of particular concern to many food manufacturers at the moment, as dairy prices have soared in recent months on the back of continued strong demand.

According to Food and Agriculture Organization (FAO) data, January 2011 prices for butter jumped to $4925 per tonne, up from $4500 in December 2010. Prices for skim milk powder were at $3500 up from $3075. And whole milk powder prices for January increased to $3801 from $3550 per tonne.

DairiConcepts’ concentrated flavor systems have a 9- to 12-month shelf life with refrigeration, the company said, but the ingredients are also available in a powdered form if refrigeration is not possible.

Potential applications include dressings, sauces, soups, frozen entrees, fillings, dips, process cheeses and baked goods, and work with aseptic, hot-fill and retort processes, the company said.
