Many dairy companies and cooperatives have turned to R&D to improve profits, going beyond milk, yogurt and cheese, looking to create functional ingredients that can be added to a wide range of products.

The latest free DairyReporter webinar, a live, one-hour event, will consider what new trends can benefit from dairy ingredients, and what companies can do to create profit-making innovative products that consumers will buy.

It takes place at 16:00 CET, 3pm UK, 10am Eastern, on November 5.

The webinar features three panelists, and is presented by DairyReporter editor Jim Cornall.

The panelists

Dolores O’Riordan​, BSc, PhD, is the lead principal investigator at Food for Health Ireland (FHI).

Prof O’Riordan is the director of UCD’s Institute of Food and Health and UCD’s vice-president for Global Engagement. She joined the food science team at UCD in 1995, following some time as a research fellow at UCC and Cornell University, and six years’ international industrial R&D experience with Kerry Ingredients.

Since then she has secured substantial funding from competitively won grants and a very important aspect of her work is collaboration with the food industry. Her expertise in the areas of physical and chemical analysis of foods and food formulation technology underpins her research, which currently focuses on enhancing the functionality and health benefits of food ingredients.

Kristi Saitama​ is vice president - global ingredients marketing at USDEC (US Dairy Export Council).

Saitama joined USDEC in 2010, where she drives export marketing programs, raising customer awareness of US dairy ingredients’ health benefits as well as accelerating usage and innovation in local-friendly food applications.

She has 23 years’ combined experience in the dairy and almond industries and a 25-year international career with a focus on Asia.

Liz Moskow​ is principal of Bread & Circus Ltd.

Moskow is a B2B and B2C marketing strategy and business development expert with 360° CPG and foodservice expertise and a track record of building and strengthening CPG, foodservice and hospitality brands.

She provides strategic thought leadership to companies seeking breakthrough innovation and channel development. She is a leading food futurist, tracking, uncovering, and predicting the future of CPG.
