Ulrick & Short grows ingredient range for dairy beverages
Following their introduction to the beverage sector earlier this year with their fat mimetic, delyte 12, to improve indulgence and reduce fat, UK-headquartered ingredient company Ulrick & Short has expanded its offering in beverages with a new functional protein. The new ingredient, complex 23, has been specifically designed for the beverage sector, meaning is highly soluble to accommodate all processing methods, as well as a much more neutral flavor profile to not alter flavor profiles.
Suitable for dairy and non-dairy drinks, the high protein content allows manufacturers to make 'Front of Pack' nutritional “Source of/High in Protein” claims. Also, the ingredient is clean-label, non-GM, and allergen-free, ensuring label transparency and no additional allergens.
Emma Walker, the company development technologist that developed complex 23 said, “For many of the public, high protein and performance drinks have a bit of a stigma attached to them because the high protein content nearly always alters the flavor profiles of the finished product, this new protein is really interesting in that respect. Using new crop bases and technologies, we’ve made a protein which has minimal impact on flavor profiles, yet is still soluble enough for all processing methods, and also allows manufacturers to make FOP protein claims."
Walker added, “Whether for a ‘purpose-built’ sports nutrition application, or just to improve the nutritional profiles of more conventionally positioned products like milkshakes amd breakfast drinks, complex 23 is a great product. We have also extensively tested this in plant-based, vegan alternative drinks with really great results."
