Paxton & Whitfield's Cullum
The subtly sweet ewes’ milk cheese has been described as ‘bright and juicy’, with a texture that is ‘butter and smooth in the mouth, and very moreish’. The cheese is made at Holker Farm in the Lake District, then transferred to Paxton & Whitfield for maturation, which involves brushing down the moulds with rapeseed oil and turning the cheeses twice a week.
The first batch has already been released for sale exclusively through Paxton & Whitfield, with more batches expected to land in time for Christmas.
