DSM's plant-based cheese prototypes
Royal DSM recently unveiled a new portfolio for plant-based cheese through which the company hopes to ‘appeal to both plant-based purists and curious flexitarians alike’. DSM achieves a dairy taste profile by using yeast extracts, masking agents and process flavors as well as top notes to deliver realistic, cheese-like flavor that mimics traditional parmesan, gouda, cheddar, mozzarella and cream cheeses.
